We are getting ready for the 2016 World Tea Expo in Las Vegas during 6/14-17/2016.

JT & Tea will have Taiwan Oolongs to be introduced with a new system for all attendees.  
Based on the craftsmanship: oxidation levels, rolling skill, and baking technique -  
Classified to 7 Taiwan Oolongs:
Wenshan Pouchong, Jade Oolong, Classic Tung-Ting, Amber Oolong, Oriental Beauty, Taitung Oolong, Formosa Bonita.   (7 Beauties make a Charming Rainbow!)


Learning about Taiwan Origin - History, Terroir, Cultivars, Cultures...
World Origin Tasting Tour   6/14 (Tuesday)

Develop your own skill on Oolong Cupping and Grading with Dr. Liu from Taiwan Tea Institute.
Class #S216, 6/16 (Thursday) 8am.

Ceremonial Oolong Service -  Discussed the New Avenues of your tea business!
6/15 (Wednesday) on the WTE Stage.
Along the presentation, we will taste all 7 Beauties, one after another...*Due to limited time and staff capacity, ONLY the first seated 88 participants will be served. 

By the way, JT & Tea will be at Booth #101, the first booth among all on the show floor!

OOLOONG SOMMELIER - Post WTE 2014 Workshop for TOST friends on 6/1/2014

Back in early March, Josephine and I had thought of having a reunion with our TOST friends while World Tea Expo 2014 takes place in Long Beach and expecting a few of our friends will be in town this May.

After further working on this project, we got a much better idea.  First of all, include a full day training with "Theory" review (which we think is so important, actually it should be the center piece of our tea education.) Then, we will do a group cupping but with individual cupping log on the 6 teas that classified in Taiwan Oolong (based on the oxidation level: Pouchong, Jade Oolong, Classic TungTing, Amber Oolong, Oriental Beauty, and Formosa Bonita.) Following with a session of brainstorming on the tea serving...based on various occasions... as our cases study to help design your own tea menu and tea programs.  After the training in our office, the whole group will be moving over to the restaurant where we have made arrangement to have cuisines pairing with Ooloong.  This will give everyone  a good experience and to sum up this OOLOONG SOMMELIER training.

The following slide has documented this Post WTE 2014 program.  It is our first ever OOLOONG SOMMELIER training, and we believe it is a good experiment and the pattern can always be modified.  We thank our participants - Chris, Karen, Lisa, Lynn, Susie and Tania.  Also we are grateful to our staff: Dr. Liu and Karen Shu for helping out.

OOLOONG SOMMELIER @ San Diego Tea MeetUp (4/26/2014)


Josephine and I have thought of reaching out to the tea community in San Diego area.  How lucky that we have a good friend Dharlene, who's the organizer of San Diego Tea Group and she has been so generous to help us to arrange this session and also find this nice venue at "The Orchard" in San Diego.  Our topic has set to be Advanced Cupping, and I decide to give "OOLOONG SOMMELIER" a good trial.  This is a great group on this special evening of 4/26/2014, we've made it together.  So glad that "Azusa Tea Club" and "San Diego Tea Group" two meetup groups have this successful co-op event,  and for sure this won't be the last one.  Our hearty appreciation to Dharlene and San Diego Tea friends.
